Back to Basics, pub by Reader's Digest. ISBN 0-89577-086-5 The basic how-to-homestead book, evreything from selecting land to weaving and spinning to buying/butchering/tending livestock. Not a lot of depth on any one thing, but enough to get you started, and offers other references.

The Foxfire Book--ISBN 0-385-07353-4--hog dressing, log cabin building, mountain crafts adn foods, planting by the zodiac signs, snake lore, moonshining
Foxfire 2-ISBN 0-385-02267-0-spring wild plant foods, spinning and weaving, midwifing, burial customes, wagon making
Foxfire 3--ISBN 0-385-02272-7--animal care, banjos and dulcimers, hide tanning, summer and fall wild plant foods, butter churns, ginseng
Foxfire 4--ISBN 0-385-12087-7--fiddle making, springhouses, horse trading, sassafras tea, berry buckets, gardening
Foxfire 6--ISBN 0-385-15272-8--shoemaking, toys and games, gourd banjos and song bows, wooden locks, water-powered sawmill

Stocking Up III -- ISBN 0-87857-613-4 How to preserve (and use later) just about anything. Fruits, veggies, bread in a canning jar (not as silly as it sounds, I've seen it), even some on meat (canned and dried). Put out by Rodale Press, so the nutritional info and safety is really really sound. Might be more your mom's speed than yours, but a useful reference if you've got the $$ to spare.

Just ordered the Back to Basics, and another that looks to be just as useful:

Storey's Basic Country Skills : A Practical Guide to Self-Reliance

http://www.amazon.com/gp/product/1580172024/103-0176764-5752628

It seems to be a fairly comprehensive, starter guide to farm life. Reviews state it is fairly shallow in it's coverage of each topic, but braod in the topics covered.

Seen that book...that review matches my memory of it. As far as I've seen, you can't go wrong with most of the things they publish, especially the little one-topic ones.
