Savory Zucchini Bread
1 c biscuit mix
1 small onion, chopped
1/2 tsp salt
1/2 tsp seasoned salt
1/2 tsp oregano
1/2 c parmesan cheese
red pepper or Tabasco, to taste (I forgot to add it, still good without)
2 T parsley, chopped
1 clove garlic, crushed
1/2 c vegetable oil
4 eggs, slightly beaten
3 c zucchini, thinly sliced (I used shredded)
Mix all ingredients, adding zucchini after other ingredients are well mixed. Bake at 350F for 25 minutes in a greased 13x9x2" pan. (An 8x8" pan worked fine.)
Very moist, more like a quiche than a bread, would be great with more veggies and maybe some sausage in.
