Sep. 16th, 2010 11:34 amI forgot to mention the most interesting thing By brought home from his trip. The facility he trained at does a company-wide cookbook, like so many places do. But this was was put together mostly by Cajuns, and some of the Laotian immigrants. haven't spent much time with it yet, but there are pages of different roux's and sauces. And cornbreads (including one with lobster). And many fine and fancy things to do to seafood. Mmmm..........
