Stayed up too late canning again last night, but we're nearly through the stash of apples, so it was worth it. Got 6 quarts of pie filling done, and 3 pints of applesauce. Plus a gallon of juice pressed out of the leavings so far, with maybe another quart or two left in the pot.

Some notes to self:

1) Aunt Geneva's pie filling recipe is *really* picky about having enough headspace in the jars. Like, leave a whole inch. Or it will boil out from under the lid when you take the jars out of the water bath, and make a huge mess, and then you'll have to re-seal those jars. Dammit.

2) It takes about 2 lbs of apples for a pint of applesauce. Also, applesauce from Granny Smith apples, sweetened (but not too much!) with a drizzle of honey, is very nice.



No work crew today, because it rained yesterday and overnight and is supposed to rain more soon. So everything's wet, and we're inside anyway. The kids are a bit stir-crazy. Can't be helped.
